I love ice cream! LOVE ice cream! Ha! While sometimes I do indulge in the real stuff, sometimes a healthier option will satisfy my cravings. I’ve tried many different recipes, but this one is my favorite – by far! It reminds me (a little) of the coconut ice cream you can get in Mexico which we enjoyed on our honeymood!
Anyway, let me get to it…
3 Cups Frozen Pineapple Chunks
1 Can Full-Fat Coconut Milk
That’s it! Yes, really, that’s it! A couple optional ingredients: a) 1 Tablespoon Pure Maple Syrup (I did not use this! I found the pineapple made it plenty sweet!) and b) Shredded Coconut
Chunk pineapple and freeze
Using a blender, combine frozen pineapple chunks and coconut milk (and maple syrup, if using)
Put mixture back in freezer and let freeze for a few hours.
Scoop frozen sorbet into a bowl and top with shredded coconut, if you want! Enjoy! 🙂
