When it comes to preparing food, I’m quite lazy. In all honesty, I really enjoy cooking and baking, but I just don’t have the time like I used to. The few times I’ve attempted to really take my time and cook a delicious meal with lots of steps and ingredients, Braxton reminded me who is in charge! And that is not me, if you are wondering! ????

With that said, if I share a recipe with you it is going to be one of two things: 1 – so amazingly delicious that it’s worth the effort, or, most likely, 2 – SO EASY and still pretty good, too!

Mashed potatoes are such an amazing comfort food. Mmm, think Thanksgiving, with the gravy dripping all over them. If you’re like me, I like to mix some corn in with them and even wipe my plate clean with fresh from the oven, homemade bread! Too much? Haha! I got a little carried away there…sorry! Please wipe your drool!

Unfortunately, mashed potatoes with all their butter and heavy cream are not as good for your hips and waistline as they taste. Yes, all things in moderation, but definitely not a go to of a healthy diet. Instead, mashed cauliflower is a staple in my diet. Here is my ridiculously easy and fast way of making them:

Step 1: Buy a steamable bag of plain, frozen cauliflower.

Step 2: Microwave according to instructions on back.

Step 3: Dump contents of bag into NutriBullet and add some seasoning of choice.

Step 4: Blend.

Step 5: Enjoy! Seriously, that’s it!
